This may help readers of code using this library to understand what str_t actually is (and isn't).
While it's explained well in the readme, not everyone is going to see the readme.

Perhaps these would be better as a POP operation?
ie. str_pop_ll(str_t* src);
Then the source could be left holding any characters which were not included in the conversion.

If a delimiter is not found, these currently return an invalid str and leave the source unmodified.
The year/month/date example in the readme actually won't work, and these functions shouldn't behave like this.

The correct behaviour should be to return the entire source, and leave the source as an invalid str_t.
