Question: What if we break this up into a few tables?

The problem with the three columns is that it's a bit cluttered, and it's not very readable on a mobile screen size when the columns get scrunched down.

I don't see a problem with splitting them up into 3 tables. Go for it!

Well, they originally Were three tables. Kathy combined them into one.
