Looks like the following would work:
include(FetchContent)
FetchContent_Declare(
gctex
URL https://crates.io/api/v1/crates/gctex/0.3.0/download
URL_HASH MD5=d5e9b5884a3c8e64ef7df8932278f6bd # Necessary for offline builds
)
FetchContent_MakeAvailable(gctex)
corrosion_import_crate(MANIFEST_PATH ${gctex_SOURCE_DIR}/Cargo.toml CRATE_TYPES staticlib FLAGS --crate-type=staticlib)
target_include_directories(gctex INTERFACE ${gctex_SOURCE_DIR}/include)
It's inconvenient to have to calculate the hash, though. FetchContent_Declare
with a GIT_TAG
"just works" in comparison.

This is not really related to corrosion, but more generally to adding subprojects in CMake. You could take a look at CPM which wraps FetchContent: https://github.com/cpm-cmake/CPM.cmake#cpm_source_cache
