If we update the copy from Remove Font Family to Use Default Font, it should be a bit clearer to folks what to do.

Redactor has a formatter button that can style text to html styles, like heading 1, heading 2, quote, etc. -- this is built into redactor (see the demo: https://imperavi.com/redactor/):

I think one just needs to add something like the following to the redactor options (possibly somewhere in in angular-redactor-filepicker.js):
