In your case you have system timezone GMT -5 but rails timezone GMT -7
When you're calling Timecop.freeze("01/01/2012") you're using system timezone
but for 1.year.from_now rails time zone
following examples should works correctly:
Timecop.freeze("01/01/2012")
1.year.from_now(Time.now)or
Timecop.freeze(Time.zone.parse('01/01/2012'))
1.year.from_nowfrom timecop.
