Update Elasticsearch client to 8.x

This repository uses the Elasticsearch 7.17.4 Elasticsearch.Net (https://www.nuget.org/packages/Elasticsearch.Net/7.17.4) NuGet package, while for 8.11, the Elastic.Clients.Elasticsearch (https://www.nuget.org/packages/Elastic.Clients.Elasticsearch) package must be used.

There are breaking changes in the 8.x versions of the package:
https://www.elastic.co/guide/en/elasticsearch/client/net-api/current/release-notes-8.0.0.html#_version_8_is_a_refresh_2.

Would it be possible to update this repository, and release a new version with an incremented semver major version change to reflect the breaking changes in the dependency?

Doc needs updating

Config should be set to release before build
Assembly binding entry should be there for internal builds
