Unless you have enabled DEVEL messages, it should not normal packet events. What messages do you get?

sfcapd logs every received sflow on /var/log/messages

These are status messages each time the files are rotated - typically every 5min or so. you should not set -t less than 60, otherwise files get overwritten.
Fixed: -t < 60 results in an startup error
