For anyone looking, you can alternatively do something like

<span th:text="${T(com.domain.util.SomeUtil).getPrettyDate(date)}">(time ago)</span>

and

public static String getPrettyDate(Date date) {
    PrettyTime pretty = new PrettyTime();
    return date != null ? pretty.format(date) : ""; //or whatever implementation
}

with the caveat about unit testing static methods blah blah blah

As it is not possible to create a custom "Expression Utility Object" this way and you're able to add any object to the context (non-spring) or model attributes (spring) it seems not necessary to write thymeleaf integration as it is already supported.
