Agreed, this would be useful, but would be pretty difficult under the current architecture :(

In general, if you want to implement this percentage feature, as well as sorting by value, subtotalling etc, I would recommend that you implement a new renderer, rather than modify the core PivotTable.js code. Please let me know if you'd like some direction on this...

I figured out an elegant way to do this, and it's been implemented in this commit: 4832221
