This is a great Helm chart. I tested it, it works well.

I wonder how to customize the file values.yaml,

(1) to setup multiple master/slave replicas, see the diagram below; and

(2) to enable Prometheus for Grafana; and

(3) to switch in-memory mode to persistence mode, and vice versa.

I have experienced the described issue: redis/redis#9956 (comment) and could manually fix the problem by opening a shell into the pod, connect to sentinel using the cli and run sentinel reset mymaster.

Can you please enable and update a helm repo from this git?

With this, we can do:

helm repo add redis-cluster-ha https://mlkmhd.github.io/redis-cluster-ha/charts
helm install redis-cluster-ha/redis -f values.yaml

Another option is create a repository to all charts using submodules, like:
