All of the custom echo stuff should be more reuseable

@coleiver I don't think we can change the height of the navigation bar. From the Apple docs:

It is permissible to customize the appearance of the navigation bar using the methods and properties of the UINavigationBar class but you must never change its frame, bounds, or alpha values or modify its view hierarchy directly.

meaning it's stuck at that size. I looked at Facebook, Instagram and a few other apps and it seems they use the default size and just hide it when scrolling instead of shrinking it. If you know of an app that has a larger bar at the top let me know, otherwise I think we will have to change it.

Also, we should probably display what category an echo is
