So, after a little hair-pulling and digging, I stumbled upon the undocumented Issue/Events class. Works pretty much just like the rest of the api and provides a solution to my particular problem...
$activity = $client->getHttpClient()->get('repos/'.$this->user.'/'.$repoName.'/issues/events');
becomes
$activity = $client->api('issue')->events()->all($this->user, $repoName);
Even though I found a specific call for the end point was was trying to reach via the getHttpClient->get() method and I no longer have a problem, this issue is still valid and will remain open.
