It's a good idea, but I probably wouldn't build it into the sprite-factory directly...
... instead consider using an existing tool such as guard, it should be a simple matter to use a tool like guard to run the sf
command when the images in the directory change.

I made it, for a reference to others:
need install:
gem 'guard'
gem 'guard-rake'
add this to Guardfile:
guard 'rake', task: "assets:resprite" do
watch(/app\/assets\/images\/icons\/.*/)
end
watch directory need change to fit your configuration.
then:
guard
from sprite-factory.
