Timeout activity doesn't stop once timeout is over

Currently, a gradient or blink command is run after the timeout period. But that command should stop running (color should change to a steady #000000) after new activity is detected, even if the new activity is an invalid command or an input like "debug" that does not stop the current activity by being run.

Debug mode is clunky

debug is too granular; either you get a couple lines of feedback or details on every single function that's run. Implement a verbosity setting so that we can be selective about debugging information without turning debug off and putting Serial.println(s everywhere.
