Best way to do that would be to use a different database (0 is the default) for each installation which is supported. Using the same database might work ok just because the chance for a collision is decently low but two sites using the same session storage does not increase the chance of collision other than the fact that there are more sessions.

I recommend setting "session.hash_function = sha512" in your php.ini.

Keep in mind the memory limit and therefore the possibility for large sites to crowd out the small sites if you don't have enough headroom.
