Currently, the docker image builds for our project are set up to use DockerHub. However, the automated builds on DockerHub are now behind a paywall. As a result, it may be better to switch to using GitHub workflows to build our docker images and push them to DockerHub and/or ghcr.io.

I propose to set up GitHub workflows to build the docker images. Our DockerHub was previously set up to build two images based on the DOCKER_TAG environment variable: 6.6.5 and 6.7.1 (See hooks directory). Additionally, there was a :base tag that had all the dependencies regardless of gemstone version since both images have a common base.
