It would be nice to have my own little version of MetPy, but which was actually nice and user-friendly to use...accepting arbitrary xarray objects

Also, could use more up-to-date methods for:

• Calculating LCL (Romps, 2017)
• Calculating saturation vapour pressure (Don't use Bolton 1980!)
• Calculating Estimated Inversion Strength (EIS) from Woods and Bretherton (2006)

unify_latlon should instead be:

def unify_latlon(ds):
    # Check dimensions are consistently named...
    for dim in ds.dims:
        if dim=='latitude':
            ds=ds.rename({'latitude': 'lat'})
        if dim=='longitude':
            ds=ds.rename({'longitude': 'lon'})
    return ds
