You seem to be using the 'shell' version of ENTRYPOINT in your Dockerfile. According the the docs you need to use the 'exec' shell command, otherwise signals won't be handled correctly, and "docker stop" doesn't work.
The other way to fix is like this (copied from my own working code):
FROM adoptopenjdk:11-jre-hotspot
COPY target/lib /run/lib
ADD target/main.jar /run/main.jar
ENTRYPOINT ["java", "-jar", "run/main.jar"]
And then use the manifest to reference the dependency jars, and then you don't need blobbing, and thus don't need the shell in the ENTRYPOINT.
