Resolved it by adding saadparwaiz1/cmp_luasnip as a dependency. Overlooked the part in the documentation that says:
By default luasnip is configured to expand snippets, and the only snippets you get will come from your LSP server. If you want to load custom snippets into the completion menu you need add cmp_luasnip as a source in nvim-cmp.
