If you would like to have your colleague's access your local virtualhosts over a network, you'll need something like dns or an adhoc version of it (like zeroconf see https://en.wikipedia.org/wiki/Zero_configuration_networking) or they can add your ip address and domain name in their /etc/hosts. Virtualhost.sh afaik does nothing to help you in this specific situation.

Currently, they can view my localhost with no extra settings changed by myself.

But the virtualhost they see when they connect is the one that was copied into the virtualhosts directory first.
So I was hoping for some way of controlling that order, or allowing for more options.

@gingerbeardman It boils down to being able to define a hostname that can be accessed by other computers on the network, and that being reflected in your ServerAlias definition within your virtualhost. The simplest way to do this would be use a dynamic DNS service with a wildcard domain (*.gingerbeardman.dyndns.org, for example). There is some discussion on this topic in the wiki.
