There's no support for that built in to the plugin, and I'm not sure that it's a common enough thing to warrant addition. I'm not completely opposed to the idea, but my goal is to keep this plugin as minimal and simple as possible and avoid feature bloat.

That all being said, this sort of thing is pretty easy to set up on your own. For instance, if you create a file called ~/.vim/after/ftplugin/python/SimpylFold.vim, and put in it the following line:

setlocal foldmethod=manual

that should do what you're asking for without having to modify SimpylFold itself. However, keep in mind that this will prevent SimpylFold from automatically adding new folds for new classes and functions that you define during the editing session; it will only define folds for those that are present in the file when it is opened.
