Indeed. After installing systemd-boot, I was able to build a Debian sid image. Thank you very much for your support, and your queued up improvements for these things.
No idea, how the /sbin

issue can be fixed on Debian systems.
I am going to leave the issue open, as it should be automatically closed when the merge/pull request gets accepted.

You should be able to modify your profile or if you just want to mkosi to look in there, you could use ExtraSearchPaths=
