@jorhett Most distributions have limited version options without special 3rd party contributions. That is why compiling source (like @nullck suggested) may be the only practical way to choose specific versions.

if you want you can see the php/recipes/source.rb, and look the parameter
version = node['php']['version']

If I wanted to install from source, I wouldn't open a bug about installing from package.
