The resolution (low, high) timings between the i2c_write and i2c_read, not the timing of the read.
So what you should actually do is wait for e.g. the typical time before retrieving the measurement. I2c commands itself should not take longer than 1ms.

If there is no data available the sensor will respond with a NACK. I am however not sure at which point data is available, since internally the sensor does multiple measurements and averages them for noise reduction. It is possible that you can receive data before the measurement is finished.
