I think you need to provide all templated values in the properties.
This means you need to provide "created" and/or "updated" in the properties to get the GSI updated.

In order to use created and updated in update, it does not seem efficient to first query and then use them in update

If you don't provide them, then onetable would need to do a read from the database to get those values. So you providing them means an update can be one in one operation
