If you're meaning a select box with the first option just telling you to choose an option, you can set "required" on the select element, and give the invalid option(s) an empty value (value=""). If you don't set an empty value explicitly, the browser uses the text of the option (eg: 'select an option').

If you're doing something else, you might want to look into creating a custom validator, or using a regex.
