After a bit more reserach, I came to this solution: https://github.com/bmalpham8/shopware-hybrid-auth/commits/more-provider-data
However, the provider Amazon isn't documented at hybridauth v2. I just found an issue on adding Amazon. Strangely, it searches for the classes on that folder with a handful of providers.
My commits at the branch also extends other things: We are now able to collection users's birthday, if set, which is also important for an registration.

Just copy the contents from the additional-providers/hybridauth-amazon/ directory into the Hybrid/ directory.
cd vendor/hybridauth/hybridauth/
cp -R additional-providers/hybridauth-amazon/* hybridauth/Hybrid/
Clear all caches. Enable the provider in the plugin configuration and you should be good to go.
