Hey guys, I should have updated sooner but what I eventually figured out was that I was simply misunderstanding the functionality of bs_grid.
The reason pagination etc wasn't behaving as I expected is because the plugin expects the server-side code that returns the JSON to do the actual filtering and the pagination tools are just helpers. In other words, you need to update the code that generates the JSON to limit the rows returned based on the variables provided and then the various tools should work.
