Memory allocation is needed in user program for returning arrays (string/[]byte) from host function. There are more than one way to do it (e.g. https://github.com/perlin-network/smart-contract-rs/blob/master/src/sys.rs is an example for using two functions to pass the length and write back the array respectively) and I'd suggest to choose the most efficient way based on your own specific use case.

An example on this would actually be great. What if I have a wasm function that "takes" a string and "returns" a string, i.e. wants pointer & length of a string, and then pointer for somewhere to write to? I'm a little lost on how to do that, forgive me.

I see now that this was a silly question. You need a function in the wasm to allocate memory and return a pointer.
