Will take a look this afternoon. There's been some releases of jupyterlab, dask, dask-labextension that we may need to update for.

@kaedonkers It's most likely from the juptyerlab update. I pinned jupyterab to 0.35.6 in informatics-lab/windshear_demo@binder...TomAugspurger:binder, and things seem OK https://binder.pangeo.io/v2/gh/TomAugspurger/windshear_hero_demo/binder.
For now, I'd recommend adding that to your environment.yml. I'm hoping to update the pangeo binders soon.
