I have the same issue. Actually it seems related to the spec.
I found it using openapi: 3.0.1 while it doesn't appear using swagger: "2.0".
@wilkystorm is it the same for you?
P.s. I saw they solved it by updating the swaggerUI in the beta release. Maybe the solution would be to update the swaggerUI again? @outofcoffee

Interesting that this seems to differ between Swagger 2.x and OpenAPI specs 🤔
I see it particularly with header values, rather than path params.
Just tried this with the v2 petstore spec: https://petstore.swagger.io/v2/swagger.json and it works, with path and header (see the DELETE operation). Also v3 https://raw.githubusercontent.com/OAI/OpenAPI-Specification/main/examples/v3.0/petstore-expanded.json seems to work (doesn't have a header param, but does have path params).
