Generally they are by city rather than country. I also wonder whether we really want to do lots of subdomains (which we may switch each year as different people run them) as opposed to just linking from the map or main page to relevant site ...

I can understand if this isn't the way opendataday wants to do it all the time, but FWIW, the DC event asked and received dc.opendataday.org for last year, and we're using it again this year. It was nice to have.
So that we didn't have to keep going back and asking for updates as we moved hosts or rebooted EC2 instances or whatever, we asked for the subdomain to CNAME to a non-used subdomain on a domain we control -- right now, it points to opendata.konklone.com
, and then I'm able to provide my own CNAME from there to the current host. Last year that was EC2 via me, and this year it's Github Pages via @JoshData.
I wonder if the ODD team could set up a YAML or JSON file on Github somewhere that gets automatically synced to their DNS provider, so that you can manage the assignment of subdomains over Github? Not sure what provider you use, but if they provide an API, this could be a neat experiment and a model for community DNS management.
