are flipped vertically so that the light is from the right side and there is not a

On the fleets and capturing ships, that's been discussed in the mailing list in
multiple proposals. The main worry are the balance issues that can crop with that,
both the benefit from capturing ships (ships can be very expensive) and the benifit
in combat from having 4-5 cruiser escorts. You can see the proposal here:

On the planet, we'll soon be starting the transition to big systems and will be using
completely new planets most likely larger then the ones we currently have. Also a
system/planet editor will most likely be integrated so that creating a large universe
will be much easier. It will be great to have many more planets and the likes for
that. You can read more about that in the proposal on the mailing list.

Back on the issue topic, this will eventually be handled, but it's not top priority
at the moment. Currently the next two major focuses are the big systems proposal and
the sensors (electronic warfare) proposal.

Well if you want to sidestep the escort problem, you could have the captured ship automatically travel to the nearest planet with an outfitter (So you can access the the equipment menu) and land there. You might have to protect the ship until it makes its first jump though.
