These parameters are only exposed in a version of OSRM that is compiled with debug support.
(assuming your are on a Linux based system)
You need to compile https://github.com/Project-OSRM/osrm-backend from source and run cmake with cmake -DENABLE_JSON_LOGGING=1 .. and install make && sudo make install.
After that you can compile node-osrm from source:
export PKG_CONFIG_PATH=/usr/local/lib/pkgconfig
npm install osrm --from-source
