Some of this is looking evident from the descriptions given.
You can run headless via ssh or vnc. There is no need for the apps you use to be client server based to run headless.

The dongle question is best solved by doing this yourself as a test and posting the result or the settings you made to make it work. That helps in creating documentation for the special use case you are interested in. If you break something just reinstall the image. It depends a bit on the processing power your use needs and if this is available from your pi hardware.

The middle question needs some more explanation: "Is there any benefit to this?"
Do you question your own use case of using two dongles in one pi or do you want reactions to something else?
