I don't wanna be a chess.com fanboy, but regarding some UI stuff they've made them more easily readable and simpler.

Personally I dislike the wide bar and if it's not wide, then it has no space for the eval. Moreover, unless you are streaming, the eval is in the computer eval window anyway. And what about mobile? Natively they don't even have eval.

I think in this way.
For streamed games, YouTube, twitch, ongoing tournaments it better to have a big visible bar. It help the watchers to quickly see, regardless of everything.
For the mobile app, the bar on top is perfect.
For the web version of the site where just the number is display I think it is OK but my caveman mind would still prefer something visual rather than a number( I'm an engineer btw and still like shiny-shiny things).
And another ideea for the eval number in the bar is to display the eval number in the bar rotated, aligned with the length of the bar, not the width.
As far as I could read the lichess community, they enjoy the blunder, mistake, inaccuracy icons popping here and there. We're still kids. We like colors, we like to win, especially when it is more flashy. So I think this is the way to go, rather than a super minimalistic, mathematical approach. And I bet that people request the computer analysis more for when they win than when they lose, just to see how good, how accurate they were against their opponent. And this tiny bits of visual arcady satisfactions are making a big difference in the users gameplay experience.
