I think what Yesod does is the best example. runStdoutLoggingT doesn't give you control of how the logging is performed, you'd need to drop to runLoggingT instead.

I ended up using something like the following for a one-off commandline tool, does that look more or less sane?

-- custom logging fn to filter everything but LevelInfo and above
defaultOutput :: Handle -> Loc -> LogSource -> LogLevel -> LogStr -> IO ()
defaultOutput h loc src level msg =
  if level >= LevelInfo
    then S8.hPutStr h ls
    else return ()
  where
    ls = defaultLogStrBS loc src level msg

defaultLogStrBS :: Loc -> LogSource -> LogLevel -> LogStr -> S8.ByteString
defaultLogStrBS a b c d = fromLogStr $ defaultLogStr a b c d
