I believe the "docker way" is to have everything going to stdout and capture it on the host. @ndeloof can confirm this.

Exact.
libswarm will (when feature complete) to let you plug arbitrary logging service, see https://blog.docker.com/2014/07/libswarm-demo-logging/
In the meantime I didn't evaluated alternate options to collect logs. I guess you could have a separate collector container running some collectd + logfile plugin or equivalent to collect docker daemon logs for your jenkins container. Need to investigate on this topic.
