You can do something like this to customize the used version :
buildscript {
repositories {
maven {
url "http://packages.confluent.io/maven/"
}
}
dependencies {
classpath "io.confluent:kafka-avro-serializer:4.1.0"
}
}
plugins {
id "com.github.imflog.kafka-schema-registry-gradle-plugin" version "0.4.0"

If you call :buildEnvironment
you should see that the right version is used :
classpath

Unfortunately I don't think it is possible to change the buildscript configuration at runtime (which makes sense as you need a classpath to run the plugin).
