Hi there,
Your description isn't clear enough for me to fully understand your process, so I'm not able to give precise feedback. But one possible explanation for what you described could be if your mooring system is taut (chain is not laying on the seabed), since you only mentioned the weight and didn't mention the tension of the lines.

I can offer a general recommendation that might simplify things. I would suggest assuming the platform will be perfectly trimmed (i.e. heave = 0). You could design your new mooring system under that assumption, then compare the vertical force of your new mooring system (at zero heave) with the vertical force of the original mooring system. The difference in vertical force is how much you need to adjust the ballast by. This should give an adjusted design for deeper water that has zero heave offset and I think everything should then add up.
