Okay, I'll close this. Perhaps others will figure it out in the future.
FYI, there is one issue remaining with the server on Beanstalk: rendering emojis (which constitute our data labels on the graph). Linux servers don't seem to render much emojis by default, so I'll be experimenting with putting the EmojiOne font on there. I imagine most others won't run into that, but just in case someone does a google search for such a thing... :)

@pamelafox - by any chance were you using a Mac to deploy to Lambda?
If so, please see a relevant comment in #81

I have now put it on Beanstalk and it seems to work.
FYI to others putting it on BeanStalk: I wasn't able to get the permissions to work for npm install, so I had to use an ebextension file to chown the relevant directory.
I put a file named 00_postdeployscript.config in .ebextensions in my project folder:
files:
"/opt/elasticbeanstalk/hooks/appdeploy/post/99_fix_node_permissions.sh":
mode: "000755"
owner: root
group: root
content: |
#!/usr/bin/env bash
chown -R nodejs:nodejs /tmp/deployment/*
I also specified the ACCEPT_HIGHCHARTS_LICENSE environment variable under Configuration -> Software Configuration.

@pamelafox I'm sorry, but we don't quite know why this only happens on AWS Lambda, but from what I can find on a quick search, it looks like several people are experiencing similar issues with EPIPE exceptions with Lambda.
I'm glad you successfully set it up on EB :)
