Looks like this was most likely caused by me missunderstanding Content Types and the interaction with the theme. I had named the directory for my "posts" content/posts/ instead of content/post/. When I renamed the directory to the singular, the formatting was as expected.
The assign a content type section of the Hugo docs had led me to believe that the plural was expected. If it is expected by Hugo conventions, it conflicts with the expectations of the theme. For now, I will go with what it seems the theme expects and hope it doesn't get me into trouble somewhere else. :)
