I don't understand your question. The install process has been stable for many years, and we've seen thousands of successful deployments. SSL is essential, even for testing. The Gluu Server makes no sense without SSL.

I have tried to install it, but it configured 80/443 ports by default(and my server can not expose these for external access). I found there is no solution to reassign different ports in docs.

Correct. The best way would be to use a virtual ethernet interface for the Gluu Server, and use that IP address when you run setup.py.
Just Google "linux virtual ethernet interface"... for example, I turned up:
