Just my experience if it's useful -- watchman causes a lot of problems and they're usually of the confusing and unhelpful variety. It will over-watch and eat up too much memory. It will get into an invalid state and cause compilation failures (especially after a package install). It has issues with monorepos. watchman watch-del-all becomes your friend if you choose to use watchman. I've disabled it (don't install it and useWatchman: false in metro config) and everything works great without it, no more issues.

Thanks for your input @evelant. It seems React Native docs still recommend using Watchman. I think opening an issue in React Native repo to have discussion with core maintainers would be ideal for this scenario. Our goal here is to align the instructions with React Native docs for now to not create confusion (especially for new developers to the React Native community).
