The buttons bar in video players is at the discretion of the browser. Some browsers put in a buttons bar, others just put in a giant play button to view the video fullscreen. This is the great benefit, and curse of native players. You have to trust the browser to implement decent controls. On the other hand, the controls will hopefully be accessible and fast, and what the user is used to.
Try taking out the preload attribute for your MP3 file. There is a funny bug in the flowplayer audio plugin that causes some preloaded MP3 tracks to auto play uncontrollably.
