improvizations for `center` documentation about datawizard HOT 4 CLOSED

I don't wanna point fingers but I don't remember implementing this (I have the feeling that it could be @mattansb's work)
In any case, we should probably rename (alias?) it as data_center() for consistency with the new data_* group of functions

Can you please add a couple of examples to docs showing their usage?

Select / excluded should be the same as for standardize().

If we add the data prefix (why?) should also do this for standardize() (but why? This works on vectors...)
