I may have found a workaround by manually make the AppIcons.appiconset in the <project>/Platforms\iOS\Assets.xcassets folder.

Also had to do this afterwords.

Verified this issue with Visual Studio 17.10 Preview 5 (8.0.21 & 8.0.6). Can repro it.

With the workaround above, i get:
