I found something interesting, if I use selectionLimit: 2, I can see watch the model change as I make my selections from the dropdown. However if I switch to selectionLimit: 1, it will no longer show me which item I've selected.

This is my example that I'm using:
$scope.exampleData = [{ id: '1', label: 'Test1'}, { id:'2', label: 'Test2'}, { id:'3', label: 'Test3'}];
$scope.exampleModel1 = [];
$scope.settings = {externalIdProp: '', selectionLimit: 1};
$scope.$watch('exampleModel1l', function(){
console.log('Selected:', $scope.exampleModel1);
}, true);
