Is this while connecting via the VNC web-viewer? Maybe you can try connecting via RDP protocol and see if it makes a difference.
It worked using RDP!

The first time it boots it uses a ramfb display device. I think if you shutdown the container and start Windows for the second time, it will be solved.

Thanks for the info kroese, now it started with a better resolution (1280x800) but it still does not allow me to change it.
