You should just update OpenWrt in the regular way, ie. using the *sysupgrade.itb image. If you want to follow OpenWrt development snapshot, the best is to install either auc (console) or luci-app-attendedsysupgrade (LuCI Web-UI) once using opkg then keep using that.
There is no need to run the installer again. The changes to the bootloader are very minor and everything works great already with U-Boot 2021.04-rc*, no need to risk anything (replacing a bootloader is always a risk) just to go to U-Boot 2021.04.
